Mediterranean Flatbread with Garlic Herb Cheese

Think of this recipe as just a suggestion. Use your favorite flatbread, spread it with garlic herb cheese and pile it up with what you like to eat. This combo is one I love.

Mediterranean Flatbread with Garlic Herb Cheese

Makes 2 flat breads (serves 2-4)

Prep time: 30 minutes
Cook time: 7-8 minutes

1  8.8-ounce package  flatbread or naan (my favorite is the Stonefire Naan)

½ 5.2 ounce package  Boursin Garlic Herb Cheese, softened

Toppings and garnish:

½  cup arugula (or baby kale, roughly chopped)

½  cup marinated artichoke hearts, drained and chopped

½ cup roasted red pepper, diced

¼ cup red onion, diced

1/4 cup pitted kalamata olives, chopped

Heat oven to 450°. Soften garlic herb cheese in microwave (30 seconds on high)

Place flatbreads on large rimmed baking sheet.  Spread with softened herb cheese, leaving a ½ inch border. Divide topping mixture between the two breads. Finish with a couple grinds of black pepper. Bake 7-8 minutes or until bread is golden brown. 

Slice each flatbread into 3-5 pieces.  Serve.
