Grapefruit Shrub

I discovered shrubs many years ago and grapefruit is by far my favorite variation. Shrubs, also known as drinking vinegars, make a perfect addition to a pre-dinner cocktail. They quench your thirst while also stimulating your appetite. Try the cocktail option below.

Grapefruit Shrub

Yield: About 3 cups

Store: Refrigerate in a glass container for up to 4 months


2 ruby red grapefruits

1 ¾ cup sugar

1 ¾ cup grapefruit juice

¾ cup apple cider vinegar


Peel the grapefruit, avoiding the bitter pith. Transfer the flesh to a glass bowl or jar. Add sugar; muddle. Cover and let sit at room temperature 8 hours or overnight.


Add grapefruit juice, taste, adding more sugar if necessary. Add apple cider vinegar, 1/4 cup at a time, until the taste is to your liking. 


Finely strain the mixture and pour into a glass container, and refrigerate overnight to let the flavors marry. Stored covered in the refrigerator, for up to 4 months.


Rosemary-Grapefruit Gin and Tonic

1/2- 2 ounces grapefruit shrub, or to taste

2 ounces gin


4 ounces tonic


Garnish: sprig of rosemary and a grapefruit wheel


Pour grapefruit shrub in a rocks glass. Add gin and ice. 
Top with tonic. 
Garnish with a sprig of rosemary and a grapefruit wheel.
