Wine-glazed Brie with Flower Petal Mosaic
I love pretty party food- and whimsical presentation. The shimmery wine glaze over the delicate herbs and flower petals makes simple wheels of Brie really special.
The Brie can be assembled several hours in advance. Prepare two small wheels of Brie instead of one large- that way you can whisk away the nearly finished (and no longer as lovely) wheel and bring out another fresh one. That’s a good approach for all hors d’oeuvres.
In a small bowl stir the gelatin into the cold water; let stand 5 minutes.
In a saucepan over medium heat combine the white wine with the softened gelatin. Heat and stir until the gelatin is dissolved. Remove from heat and cool, stirring.
Brush Brie with gelatin mixture. Arrange flower petals and herbs on top of the Brie in a decorative (or completely free-form) pattern. Gently brush with the remaining gelatin mixture; chill until set. Continue to brush with wine glaze and chill until the herbs and flowers are completely encased in the wine glaze.
To Serve: Serve with baguette slices , crackers and apple slices if desired.
Two 8-ounce wheels of Brie
1 envelope unflavored gelatin
¼ cup cold water
2 cups dry white wine
Edible flower petals
