Watermelon Margarita
When it comes to cocktails, this is my symbol of summer. It’s best enjoyed while barefoot.
Directions
Reserve 4 small cubes (and freeze them!) or teeny tiny wedges of watermelon for garnish.
Set a strainer over a bowl and squeeze the remaining chunks of watermelon over the strainer to extract the juice. You need 3/4 cup juice.
Rub the outside rims of four margarita or martini glasses with the lime, then invert each glass into a layer of salt on a small plate to coat the rim.
Add the watermelon juice, tequila, Cointreau, lime juice, and simple syrup to a large cocktail shaker filled with ice cubes. Cover and shake vigorously for about 20 seconds. Strain into cocktail glasses and garnish with the chunks of frozen watermelon and thin slices of lime.

What's Needed:
A 2-pound chunk of watermelon (about 1/8 watermelon), rind removed and flesh cut into chunks
1 lime,quartered, plus thin slices for garnish
Coarse salt
9 ounces tequila, such as Patron Silver
2 ounces Cointreau
4 ounces fresh lime juice
1 ounce Simple Syrup
