Thumbprints
Prep Time: 30 minutes
Cook Time: 20-30 minutes per batch
This recipe is courtesy of Connie Volker. Connie said ” OK – I know everyone makes thumbprint cookies but this is the best thumbprint cookie I have ever tasted. This cookie is my husband’s favorite Christmas cookie. I hope it becomes one of your traditional cookies and years from now you WILL claim it as your own!”
Directions
In a large bowl combine butter and sugar. Add egg yolks, beating until combined. Add flour and vanilla.
Roll dough into small balls and place on greased cookie sheets. Make a depression with your finger in the middle of the ball. With a small spoon, place a dab of the preserve in the whole.
Bake in a slow oven 250° for 20 to 30 minutes. Cool on cookie sheet for 2 minutes. Remove to a paper towel and while cookie is firm but warm dip the cookie on the bottom and the top in powdered sugar. When completely cool, dust with powdered sugar again.
