Thai Chicken Salad in baked Wonton Cups

Here’s a recipe you’ll love. It’s Thai Chicken Salad in Wonton Cups. The cups are so cute- and so easy to make. Just spray wonton wrappers with cooking spray and drape them over the backside of muffins cups. Bake them til crisp and golden brown and then fill them with Dole Very Veggie salad blend tossed with Thai Peanut Dressing, shredded chicken, green onions and sesame seeds. Yum! Directions
Preheat oven to 350°F. Turn 2 (12-cup) muffin pans over and lightly spray cup bottoms with cooking spray. Drape a wonton over each muffin cup; gently press to shape around cup. Lightly spray each with cooking spray. Bake 5 to 6 minutes or until edges are lightly brown. Remove and cool on wire rack.
Combine chopped salad and chicken in large bowl. Toss with Thai Peanut Dressing to taste. Spoon equally into wonton cups. Garnish each with peanuts, green onions and sesame seed.
Thai Peanut Dressing
Whisk together 1/4 cup each reduced fat peanut butter, soy sauce, rice wine vinegar and lime juice. Add a pinch of each crushed red pepper and ground ginger and whisk until blended. Makes 1 cup.
Combine all ingredients in a food processor. Season to taste with additional lime juice. Thin with a little water if desired.

What's Needed:
24 wonton wrappers
Cooking spray
1 pkg. (16 oz.) DOLE® Very Veggie® or other DOLE salad blend, finely chopped
1 cup shredded cooked chicken
Thai Peanut Dressing (recipe below)
1/4 cup chopped dry roasted peanuts
2 DOLE green onions, thinly sliced
1 tablespoon toasted sesame seed
Thai Peanut Dressing
(Makes 1 cup)
1/4 cup reduced fat peanut butter
1/4 cup soy sauce
1/4 cup rice wine vinegar
1/4 cup lime juice
Pinch of each crushed red pepper
Pinch ground ginger
Combine all ingredients in a food processor. Season to taste with additional lime juice. Thin with a little water if desired.
