Sweet Potato Chips with Fried Sage
Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes
Thanks to Jay Dickerson for sharing his twist on baked sweet potato chips.
Directions
Preheat oven to 450ºF. Line two large baking sheets with foil; lightly grease. Slice potatoes to 1/4 inch thick rounds. Dip potatoes in melted butter and arrange on baking sheet so that chips do not overlap. Sprinkle with peanuts. Bake for 15 to 20 minutes.
Meanwhile, heat 1 inch of oil in a 4-quart heavy saucepan until it registers 365°F on a deep-fat thermometer. Fry sage, stirring, 3 to 5 seconds. Transfer with a slotted spoon to paper towels to drain, then season with salt.
Once sweet potatoes are cooked, transfer to a platter and lightly drizzle with honey. Top each potato with a fried sage leaf and serve.
