Spicy Chicken Quesadilla

Add textural contrast by combining creamy with crunchy, like a scoop of ice cream in a crisp waffle cone. Add flavor contrast by pairing spicy with mild and hot with cold. Think of a cooling yogurt sauce served with a spicy Indian curry. You can bring contrast to your food in something as simple as a this Spicy Chicken Quesadilla. Directions
Preheat oven to 450ºF. Lightly spray 2 large baking sheets with vegetable cooking spray.
Combine salad, cheese, chicken, salsa, mayonnaise and chili powder in large bowl, mixing well. Season with salt and pepper.
Place 4 tortillas on baking sheets. Top each equally with chicken mixture. Top with remaining 4 tortillas and press down gently. Lightly spray top tortillas with additional cooking spray. Bake 8 to 10 minutes or until lightly browned, turning once to evenly brown tortillas. Let stand 5 minutes before cutting into wedges.
Serve with sour cream and additional salsa, if desired.

1 package (6 oz.) DOLE® Tender Garden, finely chopped
1-1/2 cups (6 oz.) shredded pepper jack or Cheddar cheese
1 cup shredded cooked chicken
1/2 cup salsa
2 tablespoons mayonnaise
2 teaspoons chili powder
Salt and pepper, to taste
8 (8-inch) flour tortillas
