Shaved Brussels Sprout Salad

Directions
Holding each Brussels sprout by the stem end, cut into very thin slices using slicer. Toss in a bowl to separate layers.
Lightly crush walnuts with your hands and add to Brussels sprouts along with cheese, oil, and lemon zest and vinegar, then toss to combine. Season with salt and pepper.

3 pounds very fresh Brussels sprouts
4 ounces halved walnuts , lightly toasted with 2 teaspoons curry powder and ¼ cup simple syrup
3 tablespoons finely grated aged Gouda
¼ cup olive oil
1 tablespoon fresh lemon rind
3 tablespoons unfiltered Apple cider vinegar
Salt and pepper
