Rustic Grilled Cheese and Mushroom Sandwich with Light Caesar Salad

Party Season is in full swing and we’re tempted everywhere we turn with holiday treats and sweets. Somewhere in the middle of the holiday revelry I like to retreat to my own kitchen and make a simple meal of favorite comfort foods for my family. Here’s a go to meal for me: A rustic grilled cheese and mushroom sandwich with a light Caesar salad. It’s so easy and so good.
Choose a good crusty bread and fill your grilled cheese with a combination of sharp cheddar, gouda and gruyere cheeses and chopped mushrooms sautéed with a little garlic. (Try using a variety of mushrooms like baby bellas, portabellas and button mushrooms) Toast the sandwiches in a bit of butter and serve them up with Dole’s All Natural Light Caesar Salad Kit. Directions
Heat oil in large skillet over medium-high heat. Add mushrooms and garlic. Cook 4 to 5 minutes, stirring until vegetables are tender. Stir in thyme; set aside.
Spread butter on one side of bread slices; turn over. Stir together cheeses and evenly sprinkle over slices. Divide mushroom mixture between slices. Heat large skillet over medium heat. Place 2 slices in each skillet butter side down. Cover; cook 4 to 5 minutes or until cheese is melted. Repeat with remaining slices.

2 tablespoons olive oil
10 oz. mixed fresh mushrooms, chopped or sliced (Baby bellas, portabella,or button mushrooms)
3 garlic cloves, finely chopped
1 tablespoon chopped fresh thyme
1/4 cup shredded sharp Cheddar cheese
1/4 cup shredded Gouda cheese
1/4 cup shredded Gruyere cheese
2 tablespoons butter
4 (1-inch) thick slices Italian round rustic bread
2 tablespoons finely chives
