Russian Tea Cakes

Cook Time: 8-10 minutes per batch
This recipe is courtesy of Connie Volker. Connie said “Everyone has a favorite cookie at Christmastime and these are my mom’s. I always put a few on the tray I make for the family celebration on Christmas Eve, but give mom her own in a cookie tin to eat later. I’m pretty sure she would be disappointed if I didn’t make these cookies for her every year! They are my favorite too!”
Directions
In a large bowl combine butter, sugar and vanilla. Sift together flour and salt. Add slowly to the butter and sugar mixture. Fold in nuts. Chill the dough for about 1 hour.
Heat oven to 350°. Roll dough into 1” balls. Place on a cookie sheet lined with parchment paper, cookies do not spread. Bake 8-10 minutes or until set but not browned. Remove from cookie sheet when cool enough to handle but still warm. Roll warm cookie in powdered sugar. Cool. Roll in powdered sugar again.

1 cup soft butter
½ cup powdered sugar
1 teaspoon vanilla
2 ¼ cups flour
¼ teaspoon salt
¾ cup finely chopped pecans
