Tomatillos look like green tomatoes with a papery husk. Don’t be fooled. A tomatillo bears no resemblance to a tomato in the flavor department. Instead, it has a citrusy flavor that is a lovely companion to spicy foods and chiles. Available year round, tomatillos are wonderful boiled, roasted – even raw. Keep them in their husks until ready to use, then remove the husks and rinse the fruit until the sticky resin is washed away.

Directions
In a food processor or blender, add chopped tomatillos, onion, cilantro and chile; pulse to create a rough puree.

What's Needed:
1 pound tomatillos, husked, washed and roughly chopped
½ onion, roughly chopped
1 medium bunch cilantro, stemmed, washed and chopped
1 Serrano chile (or more, to taste), stemmed and chopped
