Rocky Road Chocolate Bark

Here’s one of those base recipes that can be changed to suit your taste. Change up the nuts and dried fruits. Or drop both and add chopped peppermints or candy canes, along with a hint of peppermint extract. Marbleize white and dark chocolate and scatter over chopped chocolate after dinner mints. You get the idea- just have fun with it!
Directions
Line a baking sheet with parchment paper.
Melt the chocolates in the microwave on 50% power. Stir in the mini marshmallows. Pour the chocolate mixture onto the prepared baking sheet. Spread to form a 9x10 inch rectangle. Sprinkle cashews and cherries over top. Set aside for 2 hours to set completely. Cut into 1x3 inch pieces.

8 ounces semisweet chocolate, finely chopped
8 ounces bittersweet chocolate, finely chopped
1 cup mini marshmallows
1 cup roasted, salted cashews, chopped
1 cup dried cherries, chopped
