
Refrigerator Strawberry Jam

You can make jams and jellies for immediate use without going through the canning process. Just keep it in the fridge. Spread a little of this over a freshly toasted English muffin. Hello, heaven.
Directions
Combine strawberries and sugar in a medium saucepan. Bring to a boil over medium-high heat, stirring frequently. Reduce heat to medium, and simmer 1 hour or until thick, stirring occasionally. Remove from heat, and stir in lemon juice. Cool to room temperature. Refrigerate until ready to serve. Refrigerate any leftovers.

4 cups hulled strawberries, halved,quartered or chopped (depending on the texture you like)
1 cup sugar
2 teaspoons fresh lemon juice
