Red Velvet Pancakes

Cook Time: 6 minutes per batch
A plateful of these will put a smile on anyone’s face. Good morning!
Directions
In a large bowl whisk together the buttermilk, eggs, vanilla, melted butter and food coloring.
Add flour, cocoa powder, sugar, baking powder, baking soda, cinnamon and salt; whisk just until well blended.
Let batter stand while preheating a griddle over medium high heat.
Spray the griddle with no-stick spray. When a droplet of water sizzles, pour batter by ¼ cupfuls into 4-inch pancakes. Cook about 3 minutes; flip and cook 3 minutes more. Serve with a little whipped cream, toasted pecans and maple syrup.
