Ramps
Ramps are also called Wild Leeks. They’re available early spring through June. They look like a mash-up of green onions and lily of the valley and taste a bit like a mash up of spring onions and garlic. Here’s how to try them:
Sautéed with asparagus tips and bits of bacon
Tossed with sautéed mushrooms, prosciutto and pasta
Sprinkled over tiny roasted new potatoes
