Philly Cheesesteak Sandwiches
This is one of those fast food recipes that is truly fast. Who doesn’t love fast food that you can make at home?
For easier slicing, freeze the flank steak before slicing
Wrap rolls in foil, heat in a low (250º) oven while proceeding with recipe.
Heat oil in a large heavy skillet over medium high heat. Add onions, mushrooms and bell pepper; sauté until onions are soft, about 5 minutes. Remove from pan.
Add sliced steak to the skillet, adding more oil if needed. Cook quickly over medium high heat. Season with salt and pepper.
Divide steak mixture between warmed rolls. Top each with 2 slices of cheese. Broil just until the cheese is melted.
Top each sandwich with the onion, mushroom and pepper mixture. Serve.

4 Italian or hoagie rolls
2 tablespoons canola oil, plus more as needed
1 large onion, thinly sliced
8 ounces mushrooms, sliced
1 green bell pepper, seeded and thinly sliced, optional
1 ½ pounds flank steak, very thinly sliced across the grain
8 slices American cheese
