Peanut Butter Granola

Each new year is a good time to take care of chores like changing the batteries in your smoke detectors and scheduling doctor and dental appointments for your family. It’s also a great time to take stock of your spice drawer.

Open each jar in your spice collection and give it a sniff. If you can’t smell it, you can’t taste it, either. Spices lose their pungency over time. Discard any that are past their prime. Most spices last 6 months to a year, so avoid buying large quantities. When you replace them, write the date on the new jars.

Spices really impact good cooking and you’ll want to collect and care for a good selection. Here’s a sweet-hot duo that belong in your pantry: Cinnamon and crushed red pepper flakes.

Cinnamon is the inner bark of an evergreen tree and it’s loaded with antioxidants. They say simply smelling its warm, spicy aroma boosts brain activity. Cinnamon adds a pungent, slightly bittersweet flavor to a healthy breakfast of cinnamon-laced Peanut Butter Granola .

And we all know what Crushed red pepper flakes can do for a pizza! Add that same sizzle to soups, stews, salad dressings and Asian dishes. Try Thai Chicken Salad with Spicy Peanut Dressing with the appetizing kick of crushed red pepper flakes.

Directions

HEAT oven to 300ºF. Combine peanut butter, honey and cinnamon in small saucepan; heat through. Remove from heat and stir in vanilla.

PLACE oats in a large, shallow roasting pan or a 15 x 10 x 1-inch baking pan. Pour warm peanut butter mixture over oats and stir gently until oats are coated. Spread evenly in pan.

BAKE 35 to 40 minutes, stirring occasionally. TURN OFF OVEN.

While granola is baking: PLACE raisins in small bowl; cover with boiling water. Let stand 10 minutes; drain well.

REMOVE pan from oven. Stir raisins, nuts and figs into baked mixture. Return to oven and let dry 1 1/2 hours, stirring occasionally. Store in covered containers.

2/3 cup Jif® Omega-3 Creamy Peanut Butter Or 2/3 cup Jif® Creamy Peanut Butter
2/3 cup honey
1/2 teaspoon ground cinnamon
1 teaspoon vanilla extract
4 cups uncooked rolled oats
1 cup raisins
1 cup peanuts
1/2 cup dried figs, snipped
