Orzo with Spinach and Blue Cheese

What are you serving for Christmas dinner? I like to plan a holiday menu that includes traditional favorites but I try to add a new twist each year, too. This year I’m serving Orzo with Spinach and Blue Cheese as a side dish. Sounds good, doesn’t it? The best part is it couldn’t be easier. Just grab a DOLE® All Natural Spinach Cherry Almond Bleu Salad Kit. Stir the spinach into the orzo in the last minutes of cooking. Drain it and then stir in the dried cherries, sliced almonds and blue cheese that come right in the kit. It’s so good, so pretty and so easy. And it pairs beautifully with Christmas classics like prime rib or beef tenderloin.
Here’s a tip to get everything to the table at one time: start the water for the orzo during the last 10 minutes of cook time for your holiday roast. Once the roast is out of the oven, start the orzo. It will cook while the roast rests and they’ll both be ready to serve at the same time.

Directions
Cook orzo in water in large saucepan according to package directions. When ready to drain, add spinach from salad kit. Stir until spinach is wilted; drain well.
Return spinach and orzo to saucepan. Add remaining salad kit ingredients; heat briefly, stirring well. Season with salt and pepper, to taste.
Note: Mixture can also be served chilled.

Salt and ground black pepper, to taste
