Open Face Bean, Tuna and Arugula Grilled Sandwich

Change up your tuna salad! You know there are a lot of bland sandwiches out there. I love a sandwich with personality. When I put together a sandwich I gather quality ingredients that each have enough great taste to stand alone. Here’s a personality, flavor and nutrition packed sandwich idea that’s a modern spin on tuna salad. It starts with great bread. Build your sandwich on hearty, rustic bread that’s been lightly grilled. Then grab a package of new Dole Arugula. The tangy, mustardy, peppery flavor of arugula is a great flavor enhancer for canned tuna, white beans, diced red onions and Italian vinaigrette. Whether you serve it open faced or stacked, it’s not your mama’s tuna salad sandwich.
Directions
Combine arugula, beans, tuna and red onion in large bowl. Toss with Italian dressing, to taste. Season with salt and pepper.
Arrange grilled bread on 4 larger plates. Top each with salad mixture.

1 pkg. (5 oz.) DOLE® Arugula
1 can (15.5 oz.) white beans, drained and rinsed
1 can (5 oz.) albacore tuna in water, drained and flaked
1/3 cup finely chopped DOLE Red Onion
Bottled Italian dressing, to taste
Salt and ground black pepper, to taste
4 thick slices rustic bread, lightly grilled or toasted
