Organizing your family for the school year is a solid investment in peace of mind. Try these tips that will bring calm in the middle of chaos.
Designate a spot for backpacks and lunch boxes plus an “inbox/outbox” system for all school papers and correspondence. As a family, commit to maintaining these important habits. It will save countless stressful hours searching for these key school year items, and teach the kids about responsibility and organization.
Freeze a few simple snacks as insurance against those inevitable times when life gets way too busy. A batch of Peanut Butter & Jam Muffins can defrost quickly and be eaten on the go. Freeze un-baked dough for Peanut Butter Sunshine Cookies and you’ll always be ready with freshly baked treats for an unexpected bake sale or snack day at school.
Keep a central family calendar to track school projects, afterschool sports and activities, doctor appointments and days off from school. Encourage the kids to help arrange car pools, study groups and play dates.
Keep school night suppers simple. Turn Broccoli Noodle Salad with Asian Peanut Citrus Sauce into a complete meal by adding purchased rotisserie chicken. Any leftovers? They make a great lunch tomorrow!
Directions
HEAT oven to 375ºF. Spray muffin pan with no-stick cooking spray. Stir together flour, salt and baking powder in a large bowl. Add milk, eggs, 2/3 cup sugar, peanut butter and oil to bowl. Combine ingredients on low speed of electric mixer, just until moistened. Do not over beat.
FILL prepared muffin cups evenly with half of the batter. Place 2 level teaspoons jam or preserves in the center of each muffin. Evenly divide remaining batter between muffin cups. Sprinkle with 1/4 cup sugar. Bake 18 to 20 minutes. Remove from oven. Cool in pan 5 minutes.

Crisco® Original No-Stick Cooking Spray
2 cups Pillsbury BEST® All Purpose Flour
1 1/2 teaspoons salt
1 tablespoon baking powder
1 cup milk
2 large eggs
2/3 cup sugar
1 cup Smucker's® Creamy Natural Peanut Butter
Or 1 cup Jif® Creamy Peanut Butter, stirred
1/3 cup Crisco® Pure Vegetable Oil
1/2 cup Smucker's® Seedless Strawberry Jam
Or Smucker's® Strawberry Preserves
1/4 cup sugar
