Lemon Grass and Lime Cocktail
Did you know it’s easy to grow lemon grass? Start in the produce department and look for fresh looking lemon grass stalks with small roots protruding. Plant the stalks in a large pot of good soil mix and tend them like any other garden plant. The lemon grass will take off like mint, almost to the point of being invasive, so make sure to contain it in a pot.
Why grow lemon grass? Because you can. Beyond that, it’s a key ingredient in Thai cuisine and makes an oh-so swanky stir stick for your summer cocktails. Try this one, from Homes and Gardens.
Directions
Reserve 8 lemon grass quarters, tying a decorative knot in the centre of 4. Chop the remaining lemon grass crosswise into 1cm pieces.
Remove the zest of 3 limes, using a floating-blade peeler, and reserve. Finely grate the zest of the other lime and reserve.
Slice off and discard the white pith from 1 lime. Cut the flesh into tiny green dice.
Halve and squeeze the other 3 limes.
Put chopped lemon grass, any shorter zest strips (reserve long pieces to garnish), 8 ice cubes, the finely grated zest, chopped lime, juice and sugar into a blender. Blitz for 30 seconds.
Add 250ml boiling water and stir until the sugar dissolves.
Put 6 ice cubes in each tall serving glass. Divide the longer zest pieces and the long and tied lemon grass strips between the glasses. Strain liquid through a sieve, pour into the glasses, stir gently and add mint sprigs.
Feeling wicked? Add 120ml vodka or gin to make 4-6 shorter alcoholic cocktails.

8 white sugar lumps
2 fresh mint sprigs (optional)
Vodka or gin
