Gorgonzola, Lacquered Bacon and Hendrick’s Gin

Friday means the weekend and the weekend means fun! Here’s some inspiration to get it started! Try serving this trio when friends stop by for drinks: Gorgonzola, Lacquered Bacon and a Hendrick’s Gin Martini.
This pairing feels a little swanky, as any good cocktail and nibble should. Arrange a tray with a wedge of good Gorgonzola cheese and pieces of Lacquered Bacon. Gorgonzola has a rich creamy texture and earthy flavors. I think you’ll love how it contrasts against the sweet and peppery Lacquered Bacon.
What to serve with it? A Hendrick’s Gin martini! The spiciness of the gin will cut through the intense flavors of the cheese and bacon. I make a gin martini just like my Dad taught me….shake the gin in a cocktail shaker filled with ice and strain into a martini glass. Lean close to the glass and simply whisper “vermouth”…..Cheers!
Directions
Heat oven to 425 degrees. Spray a broiler pan with cooking spray, line the inside of the pan with foil. Cut each bacon slices into 3 pieces. Place brown sugar in a bowl. Press bacon into sugar, lightly coating both sides. Season bacon with a generous grinds of black pepper. Place bacon on prepared pan, Bake, turning once, until bacon is cooked and sugar has melted, about 15 minutes. Cool completely before serving.
