Cranberry and Pear Compote with Dried Winter Fruits
Prep Time: 20 minutes
Cook Time: 1 hour
Total Time: 1 hour 20 minutes
I love the warm comforting flavors of this compote. Is it wrong to want it for breakfast? I think not! But you can also enjoy it with a scoop of vanilla ice cream or beside a nicely seasoned slice of pork roast.
To make it ahead, assemble compote but do not add topping. Bake, cool and refrigerate. Add topping before reheating.
Heat oven to 325ºF. Combine cranberries, pears, dried fruit and sugar in 2-quart baking dish.
Mix topping ingredients; sprinkle over fruit mixture.
Bake 1 hour until lightly browned and bubbly. Serve warm or at room temperature.
2 cups fresh cranberries
2 medium pears, peeled, cored and chopped
1 cup prunes, dried apricots, dried cherries, raisins, or a combination –roughly chopped
½ cup sugar
1 cup oats (not instant)
¼ cup brown sugar
2 tablespoons flour
½ teaspoon cinnamon
¼ teaspoon nutmeg
3 tablespoons butter, melted
