Colonel De Stewart’s Chocolate Cayenne Cookies

De Stewart learned at his mother’s apron strings. During the ‘50s and ‘60s his house seemed to be one of the hubs for the Hillbilly Diaspora that was taking place. People would show up at the house, everybody would hug, and then the women would attack the kitchen and cook wondrous and magical things. He learned a lot by observing but had the feeling there could be more to it than just salt, pepper, and lard. Later De went on a pursuit to learn all he could about herbs & spices. This exercise culminated in the creation of his first book which was an e-book titled, “All About Herbs & Spice”. The book is an encyclopedia of culinary herbs & spices.

Preheat the oven to 375º

In a large mixing bowl on your electric mixer, mix all the dry ingredients - flour, cocoa powder, sugar, salt, cayenne pepper, baking soda and powder.

Cut in the butter and the egg.

Allow dough to come together, but don't over mix.

Make small balls of dough and flatten slightly on a cookie sheet covered with parchment paper.

Bake for about 8 minutes.

These cookies bake really fast so use a timer.

Enjoy cookies!


Yield: 1.5 dozen

What's Needed:


1.25 cups all purpose flour

.5 cup unsweetened cocoa powder

1 tsp. baking soda

1 tsp. baking powder

.25 tsp. sea salt, fine grind

1.5 cups organic brown sugar

10 Tbs. unsalted butter, room temperature

1 egg

1.25 tsp. cayenne pepper
