Chunky Guacamole
Prep Time: 10 minutes
Total Time: 10 minutes
Here’s my guacamole recipe from my book, Amy’s Table: Food for Family and Friends. Serve it up with an icy Margarita.
Guacamole can be made several hours in advance; refrigerate until ready to serve. Press plastic wrap directly on the surface of the guacamole; refrigerate until ready to serve. The limejuice keeps it from discoloring. (That old pit thing is a myth!)
Directions
In a medium bowl, lightly mix all ingredients until well blended. Taste and adjust seasonings with salt and hot sauce. Refrigerate, tightly covered, until ready to serve.

What's Needed:
2 ripe avocados, pitted and diced
½- 1 cup sweet onion, finely diced
1 jalapeno pepper, seeded and minced
1 small tomato, seeded and chopped
Juice of 1 lime, or to taste
1 –2 tablespoons finely minced fresh cilantro
Salt, to taste
