Blue Cheese Walnut Dip
This dip makes a great hostess gift. Pack some of the dip into a small crock; tie on a small spreading knife. It can be made ahead- and even frozen for up to one month. Thaw in refrigerator overnight. To make “gift boxes” cut the tops off heavy cream containers and line them with plastic wrap. Press dip into each to create squares. Remove from box, smooth with a damp off-set spatula. Tie with green onion “ribbons” and garnish with red pepper pieces.
Directions
In the bowl of an electric mixer fitted with the paddle attachment, combine all the ingredients. Cover and chill overnight. Let stand at room temperature to soften; or freeze up to 1 month, and thaw in the refrigerator overnight.
Gift Box Garnish: Drop green onions in boiling water; plunge stems into ice water to stop the cooking process. Immediately transfer to paper towels; drain stems, and press between paper towels to dry. Press stems into sides of cheese square, beginning with the end of one stem on each side. Bring stems up and over to center of top; form loops with remaining stems, and secure with wooden picks. Arrange nuts, red pepper pieces or chile pepper halves on top.

What's Needed:
3 (8-ounce) packages cream cheese, softened
1/2 cup unsalted butter, softened
1 (4-ounce) package crumbled blue cheese
1/2 cup chopped walnuts, toasted
1/2 cup chopped fresh chives
1/4 cup cream sherry
Garnishes: toasted chopped walnuts, chopped fresh chives, rosemary sprigs
