Beets
Beets have a sweet and earthy taste that’s hard to resist. Roasting them only makes it more so. While they’re a sweet treat (containing more sugar than any other vegetable) they’re low in calories and high in vitamins and minerals. You can find beets year round, but sweet baby beets are available in the spring. Choose beets that have smooth, firm roots and fresh looking greens. Snip off the greens (and toss them in your salad or sauté them) then store the beets in the fridge for up to 3 weeks.
Here’s some inspiration to make your heart beat for beets:
Shave them and toss them into a green salad
Slice them into matchsticks, toss in cornstarch and deep fry them
Roast them, slice them, and saute with caraway seeds and add a little heavy cream.
