Antipasto Toss

Whether you go for the game  or the food (and commercials!) a Super Bowl Party should have casual, make -ahead foods- and plenty of beer!

How about a fun play on words with a “Soup Bowl Party” with several different soups simmering on the stove? Serve with baskets of bread, rolls and crackers plus a selection of beer and wine. “Bar” themes are great choices, too. A Taco Bar (served with Mexican beers), Hot Dog Bar (German beers) or Chili Bar (with an assortment of Micro Brews) is always a great hit.

For a sure win, put together Italian favorites. Make (or order!) pizzas and bake up pans of lasagna and loaves of garlic bread. Try this variation on an antipasti platter. Prepare all ingredients and dressing a day or two ahead, but assemble just two hours before serving.  Serve at room temperature.

Directions

In a blender or food processor combine all dressing ingredients; process until well combined. Taste and season with salt and pepper.

Combine salad ingredients in a large serving bowl. Pour dressing over; toss gently to coat. Cover and marinate in refrigerator for 2 hours; stir occasionally. Serve at room temperature.


Yield: serves 16-20

What's Needed:

 

Dressing:
1/3 cup cider vinegar
1/4 cup finely chopped fresh parsley
2 tablespoons extra-virgin olive oil
2 teaspoons dried oregano
1 teaspoon sugar
1/4 teaspoon salt
1/4 teaspoon black pepper
2 garlic cloves, minced

Salad:
1 pound button mushrooms, quartered
2 red bell peppers, seeded and cut into strips
1 14-ounce can pitted ripe olives, drained
8 ounces mozzarella (or use fresh mozzarella) cubed
2 (14-ounce) cans artichoke hearts, drained and quartered
1 (11.5-ounce) jar pickled pepperoncini peppers, drained
½ pound salami or pepperoni, chopped
