Almond Citrus Salad

This recipe comes from a contest we ran on my radio show. Tanya Leach submitted her Almond-Citrus Salad. It’s so fresh, so bright and so delicious, I’m sure it will become a favorite of yours! This pretty salad is perfect for a dinner party but easy enough to make any time-all the hallmarks of a great recipe! I like Tanya’s suggestion of adding roasted chicken, too.
Directions
To make dressing, use a blender and combine juice, vinegar, oil, honey, ginger, salt and pepper flakes. Blend.
In a bowl, toss fruit, onion and dressing. Serve over spinach leaves. Sprinkle almonds on top.
It's also good with roasted chicken.

What's Needed:
1/3 cup orange juice
2 tablespoons white wine vinegar
2 tablespoons vegetable oil
1 tablespoon honey
2 teaspoons grated fresh ginger
¼ teaspoon salt
1/8 teaspoon red pepper flakes
2 navel oranges, peeled and sliced
2 grapefruits, peeled and segmented
¼ cup finely chopped red onions
6 cups lightly packed spinach leaves, torn into bite-size pieces
2/3 cup slivered almonds, toasted
