All American Mini Meatloaf Salad

No matter what the season, meatloaf is a family favorite. Here’s a way to give meatloaf a fresh and healthy spin as an All American Mini Meatloaf Salad. Sauté mushrooms with onion and garlic and then mix it with ground turkey and classic meatloaf ingredients like bread crumbs, ketchup , egg and Worcestershire sauce. Instead of a meatloaf pan, you’ll bake these little beauties in muffin cups. This salad starts with DOLE® American blend. Directions
Heat oven to 350°F . Spray a muffin pan with 12 openings with cooking spray. Heat oil in a skillet over medium high heat. Add onion, mushrooms and garlic. Cook, stirring, for 5 minutes. Cool. In a mixing bowl beat the egg with a fork. Add the mushroom mixture, turkey, bread crumbs, salt, pepper, Worcestershire and ketchup. Gently mix until well combined. Divide between prepared muffin cups.
Combine glaze ingredients; spread over each meatloaf. Bake 20-25 minutes or until cooked through. Let stand 5 minutes before serving. Combine salad ingredients. Top each with 2-3 meatloaves, drizzle with dressing and serve.

Cooking spray
1 tablespoon olive oil
1 small onion, finely chopped
4 ounces mushrooms, very finely chopped
2 cloves garlic, minced
1 egg
1 ¼ pounds ground turkey
¾ cup fine fresh bread crumbs
1 teaspoon salt
½ teaspoon black pepper
1 tablespoon Worcestershire sauce
¼ cup ketchup
Glaze:
¼ cup ketchup
1 tablespoon Worcestershire sauce
