It would be great to treat our relationship with the fish population with the same kind of care we extend to our family and friends. In this case, the parties in the relationship are we the consumer, the fishermen and the fish. It gets tricky to balance this relationship. We need fish to eat. The fishermen need to earn a living. Fish species need to remain healthy and abundant. I had the opportunity to speak with two authorities on the subject recently and while there is no easy answer, you can do your part by making the choice to purchase fish that aren’t caught using destructive, unsustainable methods. Here’s a great resource to help you do just that: a downloadable wallet card that helps guide you through the healthiest choices for you, the fishermen and the fish.
Use the guide to decide what kind of fish to buy, then select fresh smelling fish that looks moist, not opalescent. Buy from people who know their stuff, who can cut and skin the fish- and tell you where it came from and how fresh it is.
Quick ideas for grilled fish:
Fish kabobs: Thread cubes of fish steaks on to skewers along with mushrooms, cherry tomatoes and onion wedges.
Fish steaks: Toss them on the grill much like a beef steak. Use a wide spatula to turn.
Fish in foil packets: Add canned artichoke hearts, diced tomatoes, olives and herbs. Toss it on the grill. Just before serving, open packet and sprinkle with feta cheese.
